I am using a 74HC595 serial-to-parallel converter to shift bits out to an HD44789 lcd (from a pic 16f876).
Will the 74595.C library work with the 74HC595, and if so do I have to modify the code at all to use it with the LCD (how does the lcd get strobbed)?
Also, has anyone written any c code for LCD display using this method?
Any help would be great!

Yes, 74595.C is the generic name to handle this serial-to-parallel converter, no matter the family they correspond (HC, L, LS, HCT)

Is up to you. Not sure but may be somebody do it before. I don't like the idea of the extra and obscure code you will get just because you dont have enough pins available. I will try another bigger uC or will divide the tasks and send the info to an independent LCD display using two lines.
